The Centre for Advanced Food Studies (LMC) was established in 1992 by the Royal Veterinary and Agricultural University, Denmark (KVL) and the Technical University of Denmark (DTU) highly encouraged by the private Danish food sector. The aim was to improve food science and educations within the food sciences at the two universities.
In 2003 the LMC signed collaboration agreements with Danish Institute of Agricultural Sciences (DIAS), Danish Institute for Food and Veterinary Research (DFVF), Danish Institute for Fisheries Research (DIFRES) and Aarhus School of Business (ASB). During the summer of 2006 the LMC also signed a collaboration agreement with the University of Southern Denmark (SDU). From January 2010 Aalborg University is also part of the collaboration.
Universities and public sector research institutions were joined as a result of the reform of the Danish universities during 2007. Food science is now located at five universities:
The Technical University of Denmark (DTU):
Food research and food science educations take place at the Department of Systems Biology (DTU Biosys), the Department of Chemical and Biochemical Engineering (DTU Chemical Engineering), the National Food Institute (DTU Food) and the National Institute of Aquatic Resources (DTU Aqua), whereas the Department of Management Engineering (DTU Management) and the Department of Informatics and Mathematical Modelling (DTU Informatics) participate to some extent.
University of Copenhagen, the Faculty of Life Sciences (LIFE-KU):
At the Faculty of Life Sciences the Department of Food Science, the Department of Human Nutrition and the Department of Veterinary Pathobiology participate. Also, the Institute of Food and Resource Economics and the Department Basic Sciences and Environment participate.
University of Aarhus (AU):
The activities are centered around the Faculty of Agricultural Sciences/Dept. of Food Science and MAPP at the Aarhus School of Business.
University of Southern Denmark (SDU):
At SDU the Faculty of Health Sciences, Faculty of Science and the Faculty of Engineering are affiliated to the LMC.
